  • 2 eggs
  • half a ripe avocado
  • 3 tbsp of oil
  • a pinch of salt
  • 1 or 2 slices of sourdough bread
  • 1 handful of cress  
  • paprika   
  • cherry tomatoes   
  1. Toast the bread
  2. Oil a frying pan and fry the eggs. Add a pinch of salt to taste.
  3. Layer some avocado over the toast. I like to mash it using a fork to form an even layer over the toast
  4. Place the eggs over the avocado
  5. Optional: sprinkle some paprika over the eggs before covering them with a few strands of cress. Accopany with some cherry tomatoes.
