Avocado and Egg on Toast

Ingredients
- 2 eggs
- half a ripe avocado
- 3 tbsp of oil
- a pinch of salt
- 1 or 2 slices of sourdough bread
Optional ingredients
- 1 handful of cress
- paprika
- cherry tomatoes
Method
- Toast the bread
- Oil a frying pan and fry the eggs. Add a pinch of salt to taste.
- Layer some avocado over the toast. I like to mash it using a fork to form an even layer over the toast
- Place the eggs over the avocado
- Optional: sprinkle some paprika over the eggs before covering them with a few strands of cress. Accopany with some cherry tomatoes.
